Ooh, I like the leek idea. When you say you save them, do you freeze them

to use when you are making stock?

 
No, I had leeks in the garden for the first time last year, so I had a constant supply--they have

long long leaves that get cut off for the grocery store. Now I save the tops of store-bought leeks if I know I have stock in the near future. I've never frozen them but if would probably work, since they're going to be boiled to death anyway.
