I need ideas and some help with this. I am exchanging my services for rent for the cafe.

Mini parm cups using the muffin cookware, filled with a salad? I have never done it, but sounds fun

 
Do you havee mini shot glasses that you can serve a gazpacho? Put a grilled shrimp on the side;

 
Variety of different wraps, maybe have the potato chips put into remade, small paper decorative

containers.

I know many of the people who will be there, but I don't know the out of town guests. I like the idea of finger foods. Thank you for all of your ideas. I will let you know what I end up serving. A huge part of it will be make-ahead and of course cost, since it is out of pocket for me. Thanks!

 
Yes, I have access to a stove and oven. It is being held in the conference room

where my kitchen and cafe are at. So I have access to refrigerators, stove top and an oven.

 
In that case, the chile rellianos casserole and croissant breakfast casserole are my faves

I have a great idea for a bite of dessert--it was on a buffet I was at--deconstructied carrot cake

served in a small plastic shot glass. It was probably about 3 bites. A crumbled or chunk of carrot cake with a dollop of cream cheese frosting.
You could do this with a LOT of cakes--chocolate with chocolate frosting.
A good thing would be is that you could have the cakes on hand in the freezer and then use them as you serve these affairs.
I also think the time of day of the meeting is important--if around 10, then I think breakfast things. If around 11 then more lunchy things.

 
I was nixed on the pulled pork sandwiches.

The office manager is picking up bagels at Panera's, so I don't have to worry about breakfast.
I am tentatively planning on chicken salad on croissants, maple-garlic pork loin sandwiches on baguette, (it is in the current issue of All Recipes magazine, if someone would like to post it) , pasta salad (vegetarian), my homemade slaw, chips and salsa (black bean and corn, pineapple and regular salsas), mini cheesecakes and rice krispy sushi . That's what I have so far. For beverages bottled water and ice tea.
There are serious nut allergies in this group, I was told. I think the marinade for the pork might have sesame oil in it, would that be considered a nut?
What do you think so far?

I would not include sesame oil if there are nut allergies; menu sounds great. Maybe add tom/mozz/

basil with balsamic glaze on a mini skewer (think the caprese sticks, often posted), they are finger friendly, easy and make ahead.....

You can do a similar presentation with cut up fruit.

 
I would not serve this to a business group--and maybe only kids. As for the menu

sounds very nice. (I am talking about the sushi RK link for not serving, by the way).
I doubt sesame oil is an allergy for ground nuts--or tree nuts. It's a seed.

 
I remember someone from the farmer's market

would buy my hummus because I used olive oil in it instead of tahini and I could swear it was because she was allergic to nuts. I do want to serve the "sushi" mostly because they are business men and women. Over half of them know me quite well and appreciate the humor in it. I want the others to remember me because of it. A little humor goes a long way in meetings like this. It is over 5 hours long.
