Blush, the scaloppine (scaloppini?) was my own post - I haven't got a clue where I got this recipe from originally (sorry), but it was back a couple of years ago when I was really trying to go lower carb. Now I just limit the desserts and save the carbs for right before I excercise. 'Seems to work for me.

 
On that note - I just thawed out 2 turkey breasts from the freezer and

while some of it is going into turkey salad, and some into the impossible pie, does anyone have any great recipes for leftover turkey?

I could search for leftover turkey recipes, I guess, but thought I'd put that out there too.

My simple turkey salad recipe:

1 cup turkey, cooked (dark or white meat)
1/4 cup mayonnaise
1 tsp curry powder
1 Tbs onion, minced (I just use 1 tsp dehydrated)
1/4 tsp (or more, to taste) crushed, ground, hot pepper flakes
no salt needed, but certainly could add

Mix, refrigerate, serve on whole wheat bread with Boston lettuce. Yum.

 
I like the sound of your turkey salad, Dawn. I like adding dried cranberries to mine, it gives

a nice twist. Chop them if they are large.

Turkey and Wild Rice Casserole
a Canadian Living recipe

1 c wild rice
3 c boiling water
2 T butter
1 small onion, chopped
1½ c mushrooms, sliced
3 c cooked turkey, diced
½ c turkey or chicken stock
1 c whipping cream
10 oz canned water chestnuts, drained & sliced
¼ c pimiento, diced
1 tsp salt
freshly ground pepper
1 c cheddar cheese, grated
1 T butter, melted (optional)

Place wild rice in strainer and rinse thoroughly under cold running water. Drain well. Place in large saucepan and pour boiling water over. Return to boil, reduce heat and simmer gently for 45 minutes or until grains are chewy but not mushy. Drain well and transfer to lightly greased 13 x 9” casserole.

In large skillet, melt butter; sauté onion and mushrooms over medium heat until tender, 5 to 8 minutes. Add to wild rice, mixing well. Add turkey, stock, cream, chestnuts, pimiento, salt and pepper; mix well.

Cover and bake in 350°F oven for 40 minutes. Combine cheese and melted butter if using. Uncover casserole and sprinkle cheese mixture over. Return to oven and bake for 15 to 20 minutes longer or until cheese is bubbly.

Makes about 6 servings.

 
Could nlb's casserole be cut in half presumably? Good idea

for turkey ideas Dawn - I always buy a much larger turkey to make sure we have lots of leftovers.

Love the sound of this one: Smoked Turkey, Avocado and Brie Sandwiches

SMOKED TURKEY, AVOCADO AND BRIE SANDWICHES

Make these when you have some beautiful fresh herbs. This is different and delicious because of the fresh herbs, garlic and pepperoni in the mayo mix. It makes a very special sandwich. If you like, you can also use this as a filling for lavosh wrapped sandwiches. Roll them up, chill them for an hour, and cut on the diagonal for a very nice lunch presentation.

INGREDIENTS:

6 tablespoons mayonnaise
2 tablespoons cilantro, chopped fine
2 tablespoons fresh oregano, chopped fine
1 clove garlic, minced
6 slices pepperoni, minced
3 ounces brie cheese, sliced thin and at room temperature
1 lb smoked turkey slices, very thin
3 large tomatoes, sliced thin
1 head spinach leaves, washed well and dried thoroughly
1 avocado, peeled and sliced thin

DIRECTIONS:

Cut 6 small (one-person size) baguettes in half.
Mix together mayo, cilantro, oregano, garlic and pepperoni.
Spread evenly over the baguette halves.
On 6 halves, now layer the brie first, spread a bit to fill in gaps, then turkey, tomatoes, avocado, and season with s&p.
Top with spinach.
Put the other half of the baguette on top of the filling mix.
This can be refrigerated for about 2 hours, but any longer and the avocado will start to darken.

Makes six sandwiches.

Definitely can be scaled down. Very forgiving recipe. We really enjoy it. True comfort food!

 
I made a batch of this last night...woudl be delish on a turkey sandwich...Cranberry Salsa

from Coastal Living. To expidite the process, I heated the cranberries with the sugar, jalapeno, lime juice and onions. Once the cranberries gave off their juices and liquid started to evaporate a little, I added the ginger & fresh mint. Nice balance of flavors here.

Ingredients
1 1/2 cups fresh cranberries
2 green onions, minced
1 jalapeño pepper, minced
1/3 cup sugar
3 tablespoons minced fresh mint or 1 tablespoon crushed dried mint
3 tablespoons fresh lime juice
1/4 teaspoon ground ginger

Preparation
Position slicing disc in food processor bowl. Place cranberries in food chute; slice, applying light pressure with food pusher. Combine cranberries and remaining ingredients in a small bowl; toss gently. Cover and chill 24 hours or up to 4 days. Serve with sweet potato chips as an appetizer or with turkey or pork sandwiches.

Yield
1 cup

 
I'm usually a stickler about grammar - meant to say "there are" but I think I was space-deprived and

trying to use a contraction that didn't quite come out right! ;o)
