I received my order of black and white truffle butter today from d'artagnan

I got an entire pound of the black truffle butter when it was on sale and keep it in the freezer,

Susan in Kentfield told me about a truffled roast chicken, you put the truffle butter under the skin on the breast, thighs and legs and a pat in the cavity, pepper and roast as usual. OMG it's amazing. I think she calls it Truffle Butt Chicken!

 
Ooh yes. That's another one. Decades ago, I used to put slices of black truffle under the skin

over the breast. I don't seem to be much of a cook anymore. I can' t even remember these. I haven't done that to a chicken in 40 years. Lordie!!

Thank you. I have a chicken to roast right now and I came here looking for ideas. I'm going to rub it with truffled oil.
