I survived my "Caribbean" catering gig, but just barely. With aplogies to Sandra, Joanie, Marg,

joe

Well-known member
and others who gave me authentic recipes, here is the not-so-authentic combination we came up with. "Tropically Inspired" might be a better description. It was pretty tasty, though.

Coconut Shrimp with Tamarind-Ginger Dipping Sauce

Spicy Black Bean Cakes with Crema and Salsa

Queso-stuffed Jalapenos

Scallops Broiled with Prosciutto

BUFFET:

Warm Chicken, Mango and Avocado Salad with Chile-rum Dressing

Beef Kebabs with Sylvia's Jerk Marinade, with Grilled Scallions

Assorted Grilled Sausages

CathyZ's Cilantro-Coconut Rice

Sylvia's Ginger Green Beans

Flatbread with Cumin and Coriander

Cucumber Salad with red onion and red bell pepper

Tropical Fruit Platter

DESSERT:

Pineapple Upside-down Cake

Ginger-Almond Wafers

Marilyn's White Chocolate Coconut Cream Bars

Lemon Bars.

Thanks, everyone, for your input.

(The reason it almost killed me is all the extraneous stuff I'm not listing. The menu was a runaway train. This is a food-loving Italian family that I've cooked for often (I barter with my dentist) and they each have their favorites. Flattery will get you everywhere with me, so I got talked into a complete antipasti with cold cuts, sauteed garlic shrimp, artichokes, mushrooms, capressi, prosciutto-wrapped asparagus, a big cheese platter with homemade fig bread, crudites with two dips, sorrel tart, and upscale pig-in-a-blanket (sliced kielbasa wrapped in puff pastry). I then followed the buffet with a crepe station, by request of the graduate. Jeez, I'm tired, but I think I've got my last few crowns paid off.

I'm also leaving out the store-bought bundt cake that a guest picked up on the way, along with a can of frosting. After the cake got frosted the empty can somehow got in with my olive oil, spices, salt and pepper and it looked like it was part of my arsenal. It was there for hours before I noticed.)

Wow, Joe! I am so impressed. I have to assume you had...

...help with this, right (my ingorance of catering is showing)?

That sounds like a whole mouthful of cosmetic dentistry to me.

Congratulations!

Michael

Yes, I had an assistant with me for the party, and my dentist did the grilling...

while we worked in the kitchen.

The shopping and prep took me three days. It was kind of nerve-wracking, but I tried really hard not to clench my teeth while slicing and dicing.

The party guru strikes again!! It sounds great. Don't ya hate when the menu gets away from you!!

Thanks, Joe but I read through and it contains a recipe deal breaker for me.

Roll up jelly roll style.

I get air holes throughout the bread or cinnamon rolls.

I don't roll it up. I pat out the dough, lay on half the figs, fold, pat, repeat. Piece o' cake.
