I would like to get some suggestions from you all. Our building here

in this Condo development has a meeting once a month. I haven't been able to go to one because of my back as of yet but John has and people want to meet me so I'll go to the next one. This is a 55 and up community so most everyone is up in age. John say they always have bagels so I thought I would take something. It's at 9am on a Sunday and I thought I would make the yummy and easy Lacy Oatmeal Crisps and now Michael in Sarasota has hooked me on the Elvis pound cake so wondered if I should add that. Do you think I'm going in the right direction or should it be more savory? Should I be thinking more in terms of no sugar food? I'm still very limited in how long I can stand so needs to be on the simple side or that I can do in spurts. I just want to take something. Thanks for any input.

 
Old people like our sugar!! REC:Cafe Beaujolais' Coffee Cake is the best and you can...

1. Mix the dry ingredients
2. Lie down and take a nap
3. Grease the pan
4. Lie down and read a magazine
5. Mix in the wet ingredients and put in oven
6. Lie down for another nap but put the timer on your pillow
7. Take it out of the oven and make John do the dishes
8. Lie down some more.

I love this coffee cake. It's emblazoned in the section of my brain where fractions should be.

Streusel Topped Triple Berry Coffee Cake - This is a great one - also posted in T&T:

STREUSEL TOPPED TRIPLE BERRY COFFEE CAKE

INGREDIENTS:

1 1/2 cups all-purpose flour
1/2 cup sugar (I used 2/3 cup sugar)
2 teaspoons baking powder
1 egg
1/2 cup butter, melted
1/2 cup milk (I used lowfat milk)
2 cups berries (blueberries, blackberries, raspberries; fresh or frozen) (First two times I used 1 cup fresh blueberries and 1 cup fresh raspberries, tossed with 1 Tbsp sugar just before adding to batter, since the raspberries were a little too tart. Third time I used frozen blueberries and raspberries, unthawed, also tossed with 1 Tbsp sugar just before adding).
3/4 teaspoon vanilla (I used 1 tsp vanilla extract)
1 dash cinnamon, generous

---Topping---
1/2 cup brown sugar, packed (I used 7 Tbsp dark brown sugar)
3 tablespoons flour
3 teaspoons cinnamon (1 Tbsp)
1/4 cup nuts, finely chopped (From the poster: "I use walnuts or pecans)" (I omitted the nuts)
3 tablespoons butter, melted (I used cold butter, cut in pieces)

DIRECTIONS:

*(Preheat oven to 375 F).
1. In a large bowl, stir together flour, sugar, baking powder and cinnamon.
2. In a small bowl, mix egg, melted butter, milk and vanilla.
3. Stir liquids into dry ingredients just till blended.
4. In a buttered 9 inch square pan, spread half of dough. (I used an 8-inch square pan).
5. Top with berry mixture and spoon remaining dough over berries.
6. In a separate bowl combine brown sugar, flour, cinnamon and nuts.
7. Stir in melted butter until mixture resembles moist crumbs. (I cut in the cold butter)
8. Sprinkle this over top of dough and press in lightly.
9. Bake in a 375 degree oven (about) 40 minutes until topping is golden brown.

Tons of Blueberry Coffee Cake - Another great one:

I added 1 tsp lemon zest and 1 tsp vanilla extract to the batter, plus I increased the cinnamon and decreased the brown sugar in the topping (see my notes in parentheses):

TONS OF BLUEBERRY COFFEE CAKE

INGREDIENTS:

1/4 cup butter (I used unsalted)
3/4 cup sugar
1 egg
1/2 cup milk, plus 2 tablespoons milk
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups blueberries (I used frozen, unthawed)

Topping:
1/2 cup brown sugar (I used 7 Tbsp dark brown sugar)
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon (I used 1 Tbsp)
1/2 cup chopped pecans (I omitted this)
3 tablespoons butter (I used cold, unsalted, cut into small pieces)

DIRECTIONS:

Preheat oven to 375. Grease 9 inch springform pan.

Sift together flour, baking powder and salt, set aside.

In a large bowl (of electric mixer), cream together the butter and sugar until light and fluffy. Beat in egg. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Stir in blueberries. Pour batter into prepared pan.

In a small bowl, combine (first three) topping ingredients. Cut in butter until crumbly -- then add nuts. Sprinkle over batter.

Bake for 45 minutes (I baked about 50 - 55 minutes), or until toothpick inserted into the center comes out clean.

Allow to cool. (I set the cake on a wire rack for 10 minutes, released the pan sides, then cooled completely on the rack).

From the poster: "I like to remove cake to cake plate and dust with powdered sugar." (I omitted this).

Strawberry Coffee Cake: Delicious - I think you said you were getting great strawberries now in FL:

STRAWBERRY COFFEE CAKE

INGREDIENTS:

1 cup all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt (I used 1/4 tsp)
1 egg, beaten
1/2 cup milk
2 tablespoons butter, melted (I may use 3 Tbsp next time)
1 1/2 cups sliced fresh strawberries (I used 2 cups)
(I added 1 tsp vanilla extract)

Topping:
1/2 cup all-purpose flour
1/2 cup sugar (I used dark brown)
1/4 cup cold butter
1/4 cup chopped pecans (I omitted this)
(I added 1 tsp cinnamon - next time I'll add 1 1/2 - 2 tsp)

DIRECTIONS:

(Preheat oven to 375 F. Grease an 8x8 inch square pan).
In a mixing bowl, add the flour, sugar, baking powder, and salt; stir to mix.
In a second bowl, add the egg, milk, and butter; stir to mix; add to dry ingredients and stir just until moistened.
Pour mixture into a greased 8-inch square baking dish.
Place strawberries evenly over the top of batter.
To make the topping: Combine the flour and sugar in a bowl. With a pastry blender, cut in the butter until consistency of coarse crumbs. Stir in pecans.
Sprinkle mixture evenly over the strawberries.
Bake at 375° for 30-35 minutes or until wooden pick comes out clean. (Many reviewers suggested baking about 40 minutes, which I did, but next time I may bake it for a little less time).

Another idea would be to take a quick bread or two instead of coffee cake. Those are sooo easy and

"quick" to make! If you're interested, I have some great ones, such as Strawberry Bread, Chocolate Bread with Cranberries, Cinnamon Bread, etc.

 
If you want to make something savory, how about Cheese Scones

split, topped with a slice of tomato, grated cheese and snipped bacon (optional), broiled until the cheese is melted and bacon cooked.

I haven't made these Cheese Scones, but they look easy (no rubbing in of fat) and good. I have never put chives in my scones.

You could make the scones the day before, then split and broil before the meeting. These have always been a success when I have taken them. (And the reason I have linked to an untried recipe is because I am not happy with my recipe and plan to try this one next!).
