and jane pulled together some lovely menus for afternoon make ahead events.

 
I have used orzo instead of the couscous in recipes and it works great.

Or acini de pepe might work also.

 
Was thinking if you skipped the salad, or did a salad on endive kind of option, throw the fruit on

skewars, you could skip tableware for the the savory portion of the luncheon. I love eliminating it whenever possible.
