I'm needy again...looking for a meatless potluck dish...

Pea Salad if y'all don't know is taken VERY seriously in the south, as serious as Hawaiians & Spam!

 
To add validity to the ballad, Al Terrill was the State Senate Majority Leader in Oklahoma for

12 years, when he died last year, he laid in state, in the Oklahoma State Capitol for 24 hours. I made the man his best pea salad ever. I could go on about the greens I sent to Willie Nelson's recording studio, and they ordered more, but then I'd just be bragging.

 
Hmmm....another interesting dish...

forgot to mention I go to work at 7:30 a.m. Cooking is dicey...but cooking ahead might work.

 
This may just be THE recipe for me this time out...but don't stop now...

I like that everything is pre-cooked and then re-heats at serving time. I think I can make this work nicely. I have access to the kitchen for a short heat-up...Thanks barb_b!

Tuna pate and crackers? Tex-Mex Deviled eggs? Cauliflower au gratin? Curried butternut squash with

golden raisins? If you want any of these recipes, let me know and I'll post.

 
REC Tuna-Cream Cheese Pate

2 cans tuna in water, drained
2 8-oz cream cheese, softened (seems like a lot, but it really isn't - you want a mild tuna taste)
1/4 cup scallions, chopped
2 Tbsp prepared horseradish
3 Tbsp mayonnaise
4 tsp onion powder
1/4 tsp black pepper
2 tsp curry powder
2 Tbsp lemon juice

Whirl in a food processor until done (blender stick works great for this too). Spread on crackers or use as a dip for raw vegetables.

 
REC Tex-Mex Deviled Eggs

Yields 12 appetizers.

6 hardboiled eggs, peeled
1 tablespoon minced scallion
1 tablespoon chopped fresh cilantro
1 small jalapeño pepper, finely chopped
1/4 cup mayonnaise
1 teaspoon prepared mustard
1/4 cup shredded cheddar cheese
Chili powder
Chives

Slice each egg in half crosswise. Cut a small lateral slice off of the bottom of each half. Remove yolks; place in a small bowl and mash.

Add scallion, cilantro, jalapeño pepper, mayonnaise, and mustard; blend well. Pipe of spoon about 1 tablespoon of the yolk mixture into each half.

Top each with cheese; sprinkle with chili
powder and chives. Cover and store in the refrigerator.

 
REC Cauliflower Au Gratin

1 large head of cauliflower
1 egg
1/2 cup of milk
2 Tbs Mrs. Dash Original Seasoning
1/2 onion, grated
1 cup grated cheddar cheese
1 cup bread crumbs

Preheat oven at 350°. Clean cauliflower and cut into pieces. Steam for 2 minutes, draining any excess water. Set aside.

Mix together egg, milk, Mrs. Dash, and onion; set aside.

Spray a 2-qt casserole dish with Pam and alternate 2 layers of cauliflower and cheese. Spinkle onions; final layer should be cheese. Pour egg mixture over layers, allowing it to seep through. Sprinkle breadcrumbs on top and bake at 350F for 45 minutes or until golden brown.

 
It's kind of like that "Gossip" game...I think everyone makes slight adjustments...

now and then. If not the first time, the second or third time. I've got a couple of things I don't know if I've ever made quite the same way twice, and if someone asked for a recipe...I'd be hard pressed to produce one!
