I'm still in the baking mode. Think this recipe can be doubled? Hate to do all this for 1 loaf.

Never mind- I've got the single loaf rising.
Cyn, I think it could have been doubled. So if you like it and make it again, go for it.
Normally I double bread recipes without doubling the yeast, because I prefer a longer rise, but in this case it calls for so little yeast I would use a whole packet for a double recipe.
