Imperial Noodle Salad

Imperial Noodle Salad Recipe By : Cathy Zadel

1 pound dry noodles
1/4 cup soy sauce
1/4 cup water
3 tablespoons smooth peanut butter
3 tablespoons red wine vinegar
2 tablespoons sesame oil
2 teaspoons chili oil
2 teaspoons sugar
minced green onion -- fresh ginger and garlic to taste

Cook them all the way, not al dente then douse with cold water immediately and drain as much water as you can off of them. Toss them with a few tablespoons of sesame oil and chill them. The oil will sort of coat them against the dressing.
