In the peanut butter cookie vein: Looking for a sandy textured, melt in mouth PB Cookie . .

Mistral, one of my favorite Saturday lunches...

growing up was toast, slathered in PB then strips of cooked bacon put on and another piece of toast to complete the sandwich.

I took them to work and colleagues did not like them. I really didn't either.

The first time I tasted them (just out of the oven) they seemed like they would be good but a day later the bacon fat gives them an odd texture and also an odd flavor. They crumble too easily too. I think I would put bacon crumbles in instead and use some normal shortening or butter to make the cookies next time.

No more PB cookies at our school. I had to get someone to go into the archives find it.

 
Geeze, when I was in the vicinity of 20 years of age, I saw the PB & Bacon combo. . .

in an OLD cookbook my mom had. I tried it and liked it. I would warm the PB, add real bacon bits and spread it on crackers, pack that and an apple and I had a good, tasty lunch for work or school. What I liked about it is that it really stayed with me, with the fruit and PB protein, and fat from both the PB and bacon.

I gotta make some of the above again. I haven't had it in a long time. . .

 
Betty Crocker dry peanut butter cookie pouch "enhanced"

I make peanut butter drop cookies topped with Hershey Kisses by adding several tablespoons of peanut butter and finely chopped peanuts to Betty's cookie mix, in addition to the required ingredients. We really love these smileys/wink.gif Colleen
