Inspired by Richard's dinner party photos, what are your "go to" recipes for entertaining?

Hopping on that bandwagon, I'm in the same camp. I mean if you can't try new recipes out on guests

what the heck are they for? You know, it's not like they're going to go "uh, what the f*ck do you call THIS?". I mean, it's a free meal with copious amounts of free alcohol for goodness sake.

 
Stuffed Shells make for easy serving and everyone loves them. not real fancy, but the variations

are endless.
