Christmas dinner or anything - it's only my husband and me, but for some reason, this cake knocked me out. I've made it before, and it was no problem, but I guess I just wasn't in the mood to do any baking or *anything* for that matter.. Of course, I'll be in the mood to taste the results. smileys/smile.gif

I know this is a lonely time for many. Is anyone out there, hanging out alone at home? If you need someone to talk to, just post a hello!

 
Just sent you a pm...I have 5 pears from Harry and David...Any thoughts on an easy desert to make?

Hey Girl, Just read Joanie and Gayle's posts and decided to refresh and here you are----and I see

barb_b just gave us a project!
I am pretty much house bound, everything is going well with leg and all, but it's such a job to get up and down stairs to my house and we have a big storm (wind and rain) due tomorrow.

Been searching for recipes and taking the time to really read some magazines.

Amazing the things that get to us and zap our spirit. But hang in there enjoy a cozy dinner and don't do more than you feel like. After all. ya got cake!

Barb, just checked my files and here's what I came up with: REC: Apple or Pear Cake

This one had tons of great reviews. Reviewers recommend doubling the caramel topping.

APPLE OR PEAR CAKE

From the poster: "...delicious, moist cake... with a decadent topping..."

CAKE
1 cup white sugar
1 cup brown sugar
3 eggs, beaten
3/4 cup milk
2 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons cinnamon
4 cups raw diced apples or pears

TOPPING (Caramel)
1/2 cup brown sugar
1/4 cup milk
1/4 lb butter

DIRECTIONS:

Cake:.
Preheat oven to 350 F. Grease 9x13-inch pan or springform pan.
Mix all cake ingredients by hand in order given.
Pour batter into pan.
Bake about 40 minutes or until toothpick inserted in center comes out clean.

Topping:.
In saucepan mix all ingredients and bring to a slow boil for 3 minutes.
Pour over cake and return to oven for 4 minutes.

Here's another one that had great reviews: Baked Pears With Maple Nut Sauce...

BAKED PEARS WITH MAPLE NUT SAUCE

3 medium pears
1/2 cup water
1/2 cup maple syrup
1/2 cup dark brown sugar, firmly packed
1 teaspoon maple flavoring
2 tablespoons melted butter
1/4 cup chopped pecans

Preheat the oven to 400 degrees.
Cut the pears in half lengthwise and core (you make peel them first if you wish).
Place the pears, cut side up, in a casserole dish.
Combine the water, maple syrup, sugar, maple flavoring, and butter.
Pour over the pears.
Cover and bake for 40 minutes, or until the pears are tender.
Place in individual dishes, drizzle the sauce over the pears and sprinkle pecans on top.

6 servings

That look's incredibly yummy!! I have seen various recipes of pears poached in both ....

red and white wine.
One thing I like to do is a pear upside down cake and put a bit of grated fresh ginger in butter-brown sugar mix. Candied ginger would probably work too?
I haven't had a really good pear for a long time and am thinking sliced with some Stilton or???

I am pooped, too, you guys. I've been at it since 7 am and it's 11:22 now. I still have to plate up a few things in the morning and throw my stuffing together but that's all. It's nice to go to my daughter's house but carrying tons of stuff gets old. I'm just grateful I'm not taking a lot this time.

I did sneak in one more batch of buttercream fudge awhile ago, too. Made 3 nice tins and a red plastic holiday plate full.

Heading to bed.

G'night Gayle - me tired too...and now must go back to the store in the am!!!

Nothing beats staying up late wrapping gifts only to find that the store forgot to remove a security tag. Add that to the jillion things I must do tomorrow...and it's at the mall...I'm afraid of the mall on Xmas Eve!!!!!!

Today:...Just when you think you've paced yourself pretty good...you SIL finally calls you back about food for Xmas only to find she wants you to bring a side dish, jello salad, and dessert (note to self: clean out space in fridge!) and lets you know MIL will be alone Xmas eve so I should plan to spend it with her. Ok, I can do this... only slight shift in plans after all I got nails and last of shopping done today (she said while patting herself on the back).... Then I splurged and bought myself something nice ie $$$ to wear for xmas only to walk out to car and see passinger side tire splitting and metal frays coming out (of course $$$ outfit wasn't returnable)...clearly I guess I never go on that side of the car but how does only one tire go bad?! Shoot, now add getting new tires ($$$/sitting and waiting...tick-tock) to the list of go to the grocery store, wrap gifts, clean fridge, make Xmas food, go to yet another store to try and find 'wine away' to get red wine stain out of fav jeans soaking in washer, go to the mall w/o setting off alarms stuck to the sweater that it needs to be removed from, plan/make Xmas-eve dinner for MIL and be all refreshed to take her to a late afternoon movie or something. (Yeah right!)

REC: Easy Pear Tart

I've had this in my files--it is from the 'old swap' and I can't tell you who originally posted it. It is easy, (as long as you have the ingredients on hand!) and it is also delicious smileys/wink.gif

Easy pear tart

Unwrap a Pillsbury pie crust (found in dairy
section) - I keep a supply in the freezer,
defrost about 15-20 minutes.
Roll into a slightly larger oval shape.
Take 8 oz of almond paste (I use Solo brand) and pat it or roll it - whatever! - into a slightly
smaller oval (by about an inch).
Place it on rolled out pie crust.
Peel and slice 1 or 2 pears (or apples or plums or a mixture) intothin slices and lay out artistically (!) on the almond paste.
Sprinkle with sugar (about 1/4 of a cup - I add cinnamon with apples)
Crimp up 1 inch border.
Bake at 400 for
about 40 minutes or until crust is brown and
fruit, soft.
Brush with melted apricot
preserves. It lasts about 2 seconds in my
house!

 
barb, we received the same package and enjoyed every one of those pears "as is"

This is the first time H&D fruit has actually lived up to its reputation.

I was wishing we had a few more to serve with truffle mousse.

 
pears for Barb, I just made this last night. I peeled 4 pears and put them in

a round, bowl (oven proof) opend a vanilla bean and poured chardonay over them to cover. added a bit of lavendar and baked till tender. easy and really good.

and the rest of you, I feel you're pain. it's reaching stress time and I already had a christmas carol induced psychotic episode on friday. note to self: turn off the radio idiot! then I found myself singing the chipmonk song.... ughhh!
