Bursting Wursting

It's very important to cook natural casing sausages very slowly. Put them in cold water, put over very low heat, and bring up to the barest murmer of a simmer. It takes longer, but they heat evenly and slowly so that they don't burst.

I'm usually so hypnotised by the food when it arrives it's hard for me to remember to get the camera out. LOL

Yeah, I get some looks and people make comments, but like I really care since I know how much the pictures will mean to me later. I use them for menu/dinner party planning for ideas.

 
I was fixing some the other day and DS got all over me for pricking them!!

It does let all the good juices out. I think Richard has it right.

 
Richard, late to this party, but thanks for posting your pics. We actually video-taped

most of our dinners on our last visit to Paris - talk about food fetishes!

We were traveling with my in-laws and another couple - so each night at dinner, when the dishes arrived, we would go around the table for a close-up and description of the food for the evening. It is especially funny to hear the names of the dishes pronounces in slaughtered French.

It is one of my favorite travel videos to watch! My husband teases me that he is going to make outtakes from the tapes of just the food footage for me. smileys/smile.gif
