I'm doing these again today with some experimenting
This time I'm starting with a ton of onions. 8 yellow, 1 white, 1 red. I also added some chopped celery to this. I didn't cut the third rack but instead cantlivered the three so they all fit length wise on top of the onions. I set the oven today @ 200. I'm going to check it after about 4 hours and take it from there but I fully expect this to be 5-6 hours.
