This is for a men's conference coming up in one month. It's normally held at a mountain venue with conference site at the hotel which catered the event. This time it will be held in Sacramento at a church site and the men will have to be shuttled to and from the hotel offsite. Many are balking at this and we want to wow them with the food. It will be buffet style so we don't have the impressive plating control. Do NOT want to do casseroles or the typical meat-sandwich trays, salad and cookie for dessert. Not afraid of unusual or ethnic.

To complicate it further, food will be made in a professional kitchen 15 minutes away and transported in cambros with no kitchen facilities on site.

Have you considered having it catered at the venue by outside caterers who would have the ovens, chafers, servers, etc.
BUT a pulled pork bBQ with all the trimmings would fill the bill. It would be economical, could be done the day before, transports easily but would need LARGE LARGE things, but delicious, and "manly". LOL

 
Dinner, desserts and snacks. Not Mexican because that is being done the second day.

There will be plenty of hands in the kitchen. They are getting in the. Evening before to do prep work. Catering was considered but there are a lot of good cooks/help available within the group and they would like this personal touch for the men.

Budget is loose, so not an major concern.

 
No expert here, but what about a Korean buffet. Popular bulgogi can be used for several dishes

served as cooked and also in tacos.

Usually made with short ribs, but trip tip can also be used. Side dishes can
be stewed black beans, steamed and marinated spinach, sliced cucumbers, Asian coleslaw, store bought Kim Chee, rice dishes. Maybe a Korean soup for those who want to eat very light .

go Italian, with some great and perfect meatballs and spaghetti, an Italian vegetable soup, (I have a knock your socks off recipe for it) and a panzanella salad using the last of the summer heirloom tomatoes. I've observed that men love spaghetti and meatballs...they never seem to tire of it. A couple of great breads, simple sourdough with butter or a more kicked up version with herbs, cheese, green onions and spice.
