ISO: ISO: advice for buffet for 250+

Such great advice everyone! We have been brainstorming today, coordinating

with the rest of a set menu. One day will be food trucks where they will have a choice of 4 foods. Lunch will be a BBQ with ribs, burgers and pork. So we have dinner to do. It's looking like we may do lasagna roll ups with a good, homemade bolognese sauce. Alongside that, garlic bread and ....? Trying to feature the bounty that Sacramento has, so maybe a broccoli rabe with almonds? Not sure on the side yet. Possibly apple slab pie for dessert and dishes of black pepper almonds for snacking.

 
I've served this Broccoli Slaw w/ fruit as a side w/ Italian. U can make the whole thing ahead. The

vinaigrette keeps the apples from discoloring. I merely core the apples and then run them through my Cuisinart using a thin slicing disk. You can further chop the apples a bit if you want, but it's not necessary. (I quarter the cored apples so my sections are already smaller when they are sliced.) You can cook up the vinaigrette a few days in advance. Easy and delicious!
