ISO: ISO; Advice/Input regarding making a pizza with a mix of mushrooms

I ditto Dawn. Ever since I caught this little blurb about sauteeing mushrooms, I've never gone back

It was a french guy who made this simple omelette with sauteed mushrooms, fresh herbs and a touch of cheese.

I did what he did and wow...the mushroom flavor just concentrated.

For a carton of sliced whites, portabellos, shitakes (don't use the stems), etc:

In a large wide flat pan, add:
1 Tbl butter
1 Tbl olive oil
(French Guy used 3 TBL butter)

Bring to a sizzle.
Spread out the mushrooms in a single layer. It may take two phases to do all the mushrooms. Avoid crowding because the task is to get all of the moisture to evaporate.

Saute and lightly press down on the mushroom to exude the water and concentrate the flavor. It takes about a minute to turn golden and then flip. Season with salt and fresh ground pepper.

An 8 oz package will reduce down to diddly-squat. We love them on pizza, salads, steaks, and omelettes. Also good for a vegetarian sandwich.

Caramelize some onions while you're at it.

Practice baking several pizzas with the sauteed mushrooms, caramelized onions and gooey cheese, then wrap them in foil and cover with plastic. Watch the swaying whisk....place the pizzas in a shipping bag, get in your car and drive to the post office...watch the swinging whisk...you are getting sleepy....you're putting several pizzas in a bag and mailing them to Florida...you're drifting, you're sleepy...oh wait....

....WAKE UP!!!

Go back and put some of your chocolate cookies in there.

Okay....you're sleepy...you're getting tired...you're drowsy and nodding off, but still driving carefully to the post office.

 
Add some sliced garlic in there Mar...

and you will never eat them plain again. I saute plain old white button mushrooms in a about a tablespoon each of olive oil and butter, like you do, then add the mushrooms, sliced garlic cloves, salt and pepper and cook them until they are flat and golden brown. I am not a huge mushroom fan, well at least button mushrooms, but these I love.
