Hi! I'm Michael in Phoenix's son. In my 4th Grade class, we are doing a project where there are six regions and each group has to do either an appetizer, main dish, or dessert from a certain region. My group got Northeast, and we have to do an appetizer.

There are three kids in my group, and we have to prepare everything in the classrooms. The teachers will supply the ingredients, and it has to be enough for fifty people. It can be cooked or raw.

Do you have any ideas? I would really appreciate it if you would post some.

What could be more North East than maple syrup?Here's appy

Pure Maple Syrup Dressing

2 tablespoons pure maple syrup
1 tablespoon horseradish sauce
4 tablespoons red wine vinegar
5 tablespoons olive oil
1 clove of garlic, finely crushed

Mix all ingredients together thoroughly. Chill and serve with salad or raw vegetables.

Serves 4.

 
Hi Michael's son...How about Crab Cakes? These are great and can

Crab Cakes with Cool Lime Sauce

Serving Size : 6

2/3 cup mayonnaise
1 tablespoon fresh lime juice
1/2 teaspoon cayenne
2 cans crab meat (1 lb.) -- drained and flaked
1 cup dry bread crumbs -- divided
1 jar pimientos
2 tablespoons green onions -- minced
2 tablespoons butter

COOL LIME SAUCE:
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon fresh lime juice
2 teaspoons lime zest

Mix mayo, lime juice and red pepper. Add crabmeat and 1/2 of the breadcrumbs, pimientos and green onions. Form into 8 patties about 1/2" thick; coat in remaining bread crumbs. Cook patties in butter in large nonstick skillet over medium heat 3 minutes per side or until browned and heated through. Serve immediately with Cool Lime Sauce.

COOL LIME SAUCE:
Mix all ingredients and chill.

Buffalo chicken wings were "invented" in NY state, I think Buffalo.

That sounds like a fun assignment, here is a site that has some recipes. Check out the deviled

eggs, I looked in my Time-Life series New England book and it had deviled eggs in it for an appetizer. That recipe has sardines in it, but I'm not sure how well that would go over with 4th graders. The others are almost all clams or mussels. Good luck with your project, and I would love it if you would let us know what you decide to do and how it all goes.

Here is a link to one of the oldest restaurants in Boston

It's called the Union Oyster House and it was established in 1826. My first thought on appetizers is a simple clam chowder (I'll look for a recipe) or mussels, although you might have a hard time getting the kids to eat them. I'll go look for a recipe now and try to get it to you!

Yes, Ang, in the Anchor Bar. Urban legend(?) has it that the owner of

the bar had some leftover chicken wings, and went in the back to the refirgerator where all he could find was some celery and blue cheese dressing. Voila - Buffalo chicken wings were born!

That's a good choice for your school project!

 
Some more thoughts - soft pretzels with mustard (Philadelphia), NY-style

pizza, slices of "the Big Apple" (New York City) with concord grapes (Finger Lakes).

NJ is known for tomatoes...Perhaps a tomato/Mozz/basil tart or skewer although somehow I think

that would end up in a sword fight!! I believe Nathan's Hot Dogs are from NY... Perhaps cut them up and offer different "dips" ie ketchup/mustard/onions...

On the Philly theme that Dawn mentioned...Is there an appetizer for Cheese steaks??

If you google, you will see, there is fierce competition regarding who makes the "BEST" philly cheese steak. Could be fun...Serve 1/2 the class one method of serving, 1/2 the class with the other...Class vote. Recognize that you clearly can't make steak sandwiches...BUT, perhaps there is a way to make 2 fun steak sandwich appetizers and have a "vote".
