Cinnamon-Apple Cake

This cake is usually served at Hanukkah. The cream cheese in the batter gives the cake lots of moisture. Because it's so tender, use a serrated knife for cutting.


1 3/4 cups sugar, divided
1/2 cup stick margarine, softened
1 teaspoon vanilla extract
6 ounces block-style fat-free cream cheese, softened (about 3/4 cup)
2 large eggs
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons ground cinnamon
3 cups chopped peeled Rome apple (about 2 large)
Cooking spray


Preheat oven to 350°.

Beat 1 1/2 cups sugar, margarine, vanilla, and cream cheese at medium speed of a mixer until well-blended (about 4 minutes). Add eggs, 1 at a time, beating well after each addition. Combine flour, baking powder, and salt. Add flour mixture to creamed mixture, beating at low speed until blended.

Combine 1/4 cup sugar and cinnamon. Combine 2 tablespoons cinnamon mixture and apple in a bowl, and stir apple mixture into batter. Pour batter into an 8-inch springform pan coated with cooking spray, and sprinkle with remaining cinnamon mixture.

Bake at 350° for 1 hour and 15 minutes or until the cake pulls away from the sides of the pan. Cool the cake completely on a wire rack, and cut using a serrated knife.

Note: You can also make this cake in a 9-inch square cake pan or a 9-inch springform pan; just reduce the cooking time by 5 minutes.

LOL, no. This was a really unusual cake, I can't believe the searches...

aren't turning something up. maybe I dreamed it.

I know I can wing it, but I don't know if I remember all the components/techniques.

I'll keep looking.

Rec: APPLE PECAN CAKE WITH CINNAMON FROSTING

This is the one we ended up making. It was a birthday cake. And it's really really good!

APPLE PECAN CAKE WITH CINNAMON FROSTING

CAKE:

2 eggs
2 c. sugar
1 tsp. salt
2 tsp. vanilla extract
1 1/2 c. vegetable oil
2 tbsp. lemon juice, strained
1 tbsp. lemon rind
3 c. plain flour
1 1/4 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. ground nutmeg
3 c. Granny Smith apples, peeled, cored and grated
2 1/4 c. pecans, chopped

FROSTING:

4 1/2 oz. cream cheese, softened
3/4 c. sweet butter
1 1/2 c. confectioners' sugar
3/4 tsp. cinnamon
3/4 tsp. vanilla

GARNISH:

3/4 c. chopped pecans
40 whole pecans

Preheat oven to 325 degrees.
In a large mixing bowl, beat eggs until frothy. Beat in sugar, salt, vanilla, and vegetable oil, lemon juice and lemon rind. Beat until well blended and set aside.

In a separate bowl, measure out 3 cups of flour. Add baking soda, cinnamon and nutmeg and sift ingredients together. Gradually beat the dry ingredients into sugar-egg mixture until well blended. Stir in the grated apples and chopped nuts. Butter a tube pan and flour lightly. Pour in cake batter and bake at 355 degrees for 1 1/2 hours or until done. Cool in pan for a few minutes.

In a large bowl, combine all frosting ingredients except pecans. Beat until fluffy. Spread onto cool cake. Sprinkle top with chopped pecans. Garnish base with whole pecans.
