I haven't noticed a difference in the type of yeast, just in how fresh it is.

I buy the jars and store them in the fridge after opening.

Steve is right. (You know it kills me to admit that.) I stopped buying Red Star so many years ago

I forgot it existed. Fleishman's makes a better loaf. I buy the "Active Dry."

I've forgotten a lot of things since I went blond.

 
I just bought a huge block of Red Star at Costco last night... doh!

I was referring to their dried yeast. I haven't had much experience with fresh.

If I were you I would keep using this yeast as you experiment with the other variables. Don't take our banter too seriously--people have been baking bread all sort of ways for thousands of years!

(If I can remember that far back my experience with the Red Star dried yeast is that it got weaker over time, even in the fridge.)

 
I think so. It was so long ago. I took up bread baking in 1892......
