ISO: ISO Can I use over-ripe raspberries and blueberries

I'd use vodka...I make blackberry vodka every year...it's delish. I wouldn't even consider using

Everclear. I have some and I make kaluha with it...but it sits for 2 years before you drink it. It takes at least a year for the horrid Everclear-guarantee to give you a hangover- bit to wear off.

Vodka is the way you want to go...

 
I make berry vinegars all the time too- here is a little different method just for fun

I use this method a lot- I like a touch of honey to "cut" the vinegar:

FLAVORED VINEGAR
Makes about 1 quart
3 cups white vinegar
2 Tbsp honey
12 to 16 oz frozen berries (unsweetened) raspberries, blueberries, strawberries, blackberries, whatever)
or 4 c fresh

Combine all and bring to boil in a pan over high heat. Remove from heat and let stand, covered, until cool. Strain and discard residue.

 
...and I've got a bag of frozen wild blueberries that are so bitter...

they're just taking up space in the freezer.

I'd happily try making something usable out of them.

 
I make a ton of tarragon vinegar every year, Joe. I use it all winter in chicken salad, on tuna and

other fresh fish, splash it on greens with olive oil, just tastes so fresh. I think you can use any vinegar but I really like a good white wine vinegar.
