I just made a batch of these for New Year's and I've got to say that I notice a BIG difference in the way I made them before and now. Since I was making enough for 100 people last time I bought a box of 4 lb. of frozen shrimp. When I peeled them, I ended up with 3 lbs. of peeled shrimp. I then made 3x the recipe.

Tonight I made just a few and used 1 lb. of unpeeled shrimp. Obviously, that gave me less than 1 lb. once peeled. I could tell a big difference... tonight's were a lot breadier.

I would definitely recommend using a full 1 lb. of PEELED shrimp in the recipe. The shrimp flavor comes through better and they aren't bready at all.
