ISO: ISO Fav Main Dish to take to a potluck?

What?! I had two potlucks last year...people love 'em--especially in the foodie crowd.

First potluck I had, 60 people showed up. Next potluck...we had over 90 people!

 
I often take Tamale Pie if I'm asked for a main dish.

Tamale Pie

1 lb. ground meat (beef, poultry or pork)
1 med. onion, diced
1 clove garlic, crushed
1 tsp. oil
one 4-oz. can mild, diced green chiilies
1 pkg. taco seasoning
1 1/2 cups shredded cheese, divided
1 small pkg. cornbread mix or see below
1/2 cup broth or stock
1 Tbsp. flour

Brown meat in oil in skillet; drain. Stir in onion, garlic, taco
seasoning, green chilies and flour. Cook until onion is translucent.
Stir in broth. Cook for 2 minutes. Put into baking dish or 10" deep
dish pie plate. Sprinkle 1 cup shredded cheese over the meat mixture.

Mix the cornbread batter according to package directions. Spread
batter over the meat and cheese. Sprinkle 1/2 cup cheese over top of
batter.

Bake at 400 degrees F for 30 to 40 minutes until cornbread is done. Serves 6.

Cornbread

1/2 cup + 2 Tbsp. (1/8 cup) flour
1/4 cup + 2 Tbsp. (3/8 cup) corn meal
1 1/2 tsp. baking powder
1/4 tsp. salt
1 Tbsp. sugar
1 egg white or 2 Tbsp. egg beaters
1/2 cup milk
2 Tbsp. melted butter or oil

Combine dry ingredients. Use fork to combine the egg, milk and oil
together. Stir the milk mixture into the flour mixture.

Easy to make, easy to transport, and generally enjoyed by all except those who hate fish.

Also deviled eggs (how creative!), guacamole, quiche squares, corn and bean dip in little cream cheese corn cups. I try to avoid taking a dessert because I find that it usually what people bring.

Me three. Typically, I was asked to bring a dish that wasn't duplicated. I guess you might say the

gatherings I attended were too organized.

for family dinners, I'm always amazed how the sum is so much greater than the parts of this recipe.

 
so true!! I never would have believed that such a simple mayo dressing would be so delish---with

the combo of all the other ingredients. the bacon helps, of course. My salad layers usually consist of iceberg lettuce, sliced radishes, small shell pasta, green onions, thawed frozen peas, the mayo dressing, shredded cheddar and crumbled bacon. that's it. make the day ahead is even a bigger plus for this dish. the dressing is just mayo/sugar/vinegar/salt/pepper, as I remember. Not sure the amounts right now.
