Salads in a jar. Here is a link to 30 of them!! We had a quickly made dinner with DD last

week and one thing she already had made was a delicious kale salad in a jar.
To me, for your project, having a salad ready would REALLY fill a big hole.
Other salads to make ahead are a pea salad or bean salad or slaw. And I think it is still here in T&T--Acropolis salaad. It has you mix the topping for a Greek salad (which you can have on hand in fridge) and then put it together with the lettuce when serving. It is delicious.

REC: Becky's Celery Seed Spinach Salad Dressing

We have been eating spinach salads for the past 3 nights and loving every bite. Have pre-washed Aldi spinach, pre-chopped hardboiled eggs, pre-cooked real bacon (also from Aldi), chopped green onions, sliced fresh mushrooms, chopped water chestnuts and Becky's celery seed dressing. Colleen

Becky's Celery Seed Dressing
1/4 cup white vinegar
1/2 cup sugar
1 tsp salt
3/4 cup salad oil
1 tsp dry mustard
1 tsp celery seeds
In a blender, blend vinegar, sugar, and salt. Add oil slowly. Add dry mustard and celery seeds and blend for a few more seconds.

Salmon patties are good to have in the freezer for quick sandwich dinner or with rice etc.

Good use of cooked leftover salmon.
