I'd like to make this for the holidays, but I'm a bit confused about the brown sugar measurement. Is it really 1.2 cups? Thanks!

Pecan Pralines

1 1/2 cup sugar

1.2 cup brown sugar (light)

1/2 cup evaporated milk (or half and half)

1/2 cup Karo syrup

Place ingredients in heavy sauce pan. Cook over medium

heat, stirring often. At 220 degrees, stir in 2 cups pecan halves.

Continue cooking to 240 degrees on thermometer.

Take from heat, and add 1/3 stick real butter and 1 1/2 tsp good quality vanilla

and a dash of salt. Mix well.

Cool for 10 minutes, then stir until mixture thickens and begins to lose

transparency. Quickly make patties by dropping with serving spoon onto waxed paper.

Let cool. Store airtight.

 
Hi Amanda - sorry to be so long - been out of town...

I'll have to answer your question tomorrow, though. I think it was 1/2 cup of brown sugar. I have mostly used half and half as the milk, also.

Will get back with and answer for you ASAP but I am pretty sure the amt above is correct.

My family is planning a "consumable Christmas"--presents that are food or experiences. I'd like to make these for my husband--he loves pecan pralines.

You are quite welcome! I think your husband will love these. When I was newly married in the 1970 and lived in Texas, nearly every Mexican restaurant sold pralines at the register. We all loved them so much that when I found this recipe (probably in the Ft Worth Star Telegram newspaper) I tried it and have made it ever since.

The vanilla you use makes a big difference in the taste.

One note: On the back of my original recipe card I wrote "A double batch of this is 6,749 calories!!" ha

What a sweet memory....

Oh, I hope this recipe tastes like hers. I think I have a couple of 2 lb bags of pecans left - maybe I'll make pralines this year. I'm supposed to get my new stove installed this week so I have to wait. That's why I'd gone to my daughter's for my candy making spree. smileys/smile.gif

I try to not make many if I do, or at least give most away because this is the one thing I have a hard time resisting. That's why I don't make them as often. *sigh
