CALIFORNIA SALAD
THIS IS DELICIOUS…sometimes I add garbanzo beans

1 SMALL CRISP LETTUCE
6 OZ BABY SPINACH LEAVES
2 CARROTS CORASELY GRATED
2 C CHERRY TOMATOES
2 STALKS CELERY, THINLY SLICED
½ C RAISINS
½ C ALMONDS OR RAW CASHEWS
2 TBSP SESAME SEEDS

DRESSING:
1 SMALL ORANGE, JUICED
3 TBSP OLIVE OIL
2 TBSP CIDER VINEGAR
2 TSP HONEY

MIX ALL SALAD INGREDS TOG. IN A LG BOWL. MIX TOG. INGREDS. FOR DRESSING AND POUR OVER SALAD

BUTTERNUT SQUASH SOUP (COLD SOUP)

3 C BUTTERNUT SQUASH, PEELED, SEEDED & CHOPPED
1 MANGO, CUBED
2 TSP CURRY
4 C. ORANGE JUICE
½ C HONEY OR DATES

BLEND TOGETHER IN A BLENDER WELL, TIL CREAMY. SERVE IMMEDIATELY

I've made this a couple times....one time for dinner guests....they loved it.

Hallelujah Acres Fresh Strawberry Pie


This week Rhonda Malkmus offers you a recipe that'll curl the toes within the socks within your shoes! Rhonda served her
fresh strawberry pie at our health ministry training program in July, and we practically had to call in the National Guard when
people started racing back for seconds and discovered that there weren't any.

Pie Shell:

1 cup raw almonds (or 1/2 cup almonds and 1/2 cup cashews)
1 cup soft, pitted dates
1/2 tsp. vanilla

Grind the nuts in a food processor until finely chopped, add the dates and vanilla, and blend well. Press thinly into a pie plate
(from center to the outside rim) to form the shell.

Binder:

7 or 8 Large ripe strawberries
5 soft dates, pitted
2 bananas, fairly ripe
1 Tbs.. fresh lemon juice

Blend all ingredients in food processor or blender until well mixed.

Fruit Filling

Cut 2 pints of fresh strawberries into quarters, fold into binder and fill shell. Decorate with approximately 1/2 pint of quartered
strawberries.

Cover with plastic wrap and store in refrigerator. Chill thoroughly before serving.

I have not made this. I'm not sure where this recipe is from, possibly Rawvolution.

 
Perhaps they can make vegetable sushi? or sushi pizza? Easy if you have the ingredients and

if your children have an eclectic palate, it will keep them busy and having fun for quite a while. Can all be done at the table with you supervising (except for the rice), serve with chopsticks, etc...

This is always a hit for us!

Ang...Good one! My Cousin always brings this for fathers day...Another idea...Fruit Pizza using

cookie dough as a crust. Another easy, fun idea for kids.

 
just saw a rec for a tortilla or pita, spread with cream cheese and topped with sliced grapes...

then briefly heated in toaster oven/oven. another rec was to chop up assorted fruit into bite sized pieces and freeze, then serve to the kids frozen. you could add a drizzle of honey or their favorite sauce. i also once saw someone cut the ends off of a cucumber and push a peeled carrot through the centre, pushing out the seeds, leaving you with a 'cu-carrot' - maybe they could make a simple dip to go with.

I've done this for tea parties and the kids get a kick out of it...

Take the wimpy white bread slices and cut off the crusts. Roll each one flat with a rolling pin. Spread peanut butter and jelly on them and roll up. You can leave them like they are, cut in half at an angle to serve. OR you can lay them, seam-side down on a baking sheet and toast in the oven at about 450 deg. until lightly browned.
