Julie, I think this would work great on a panini

One of our favorites is a mix of grilled summer squash. Every thing is sliced the same thickness, very lightly oiled, seasoned and tossed on the grill. Close for about a minute, open and shaza'am, it's done with very pretty grill marks.

I don't see why the plantains couldn't be done the same way.

 
That one *is* nice. It would be good to have both grill & flat pan. For the sandwich the surface...

...needs to be a flat pan and large enough (that one looks big enough), but it would be great to have one versatile so that I could use a grill surface as well. I have a small one at home that we use for sandwiches, and we love it. smileys/smile.gif

 
I think it would work to, but would need a flat pan. Grill marks would make the...

..."bread" for the borinquen jibarito sandwich break along the marks, I believe. So a flat one would work better, I think.

I've done it the long, old fashioned way I described in the recipe, and while the sandwich is terrific it would be wonderful to have a faster way to do it - ie the panini flat iron.

 
Wow! That sounds wonderful! I have made tostones, which are squished (sp) 2x fried plantains

this recipe sounds sooo good....
