chocolate whipped cream AND your added tip to stabilize it with gelatin. It was perfect and delicious and the birthday girl was very pleased. I wasn't going to use the gelatin (never used it before and was "scared") but ran out at 7am to get it and put it all together before going to Mass at 9.

I will definitely make it all again. Thanks for opening my horizons to gelatin!

You're welcome, Debbie! Glad it worked out. My kids' birthdays are coming up,

and your cake looks like something the older one might really like.

The first time I tried stabilizing whipped cream with gelatin was Thanksgiving a few years ago. I let the dissolved gelatin cool too much, and it started to coagulate. Naively, I threw it into the cream anyway and ended up with a bowl of whipped cream infested with tiny lumps of gelatin. Had to send DH on an emergency mission to the grocery store for more whipping cream!
