Sorry, haven't been around . . . so, to respond to questions . . .
I haven't tried this recipe at ALL but have baked often in the past. I intend to try it soon and will use the William's-Sonoma version.
I've used my Le Creusets for years and never removed the knob. Never had a problem with them. I also used to sell them in a retail store. Never any indication that the knobs should be removed.
The only LeCreuset disaster I've experienced was when I dropped the 5 quart casserole lid and it broke in half when it hit our concrete kitchen floor. Good luck trying to replace one of THOSE. I wound up buying a second casserole on ebay JUST for the lid.
As far as the baking, I'd go with the 5 quart because it'll force the dough into a higher loaf.
