I’m pet sitting at the twins house next-door. This is the second time I’ve been there since mom died, opened the refrigerator to see it Frat boy empty. Takeout pizza box, block of cheese, expired lunch meat and condiments. Freezer had some ground meat and chicken. Both tossed into the freezer in original packaging, so solid freezer burnt.. the only thing I can think of right now is to make up some taco meat and have that and all the taco fixings altogether in the fridge like a kit. I’m thinking I also will make hard boiled eggs to just have in there as snacks. Empty refrigerators freak me out.

Any good reheatable meal ideas? They don’t seem to be salad pp. Freezer meals all seem to be for fall and winter, but open to that. They are trying to eat heathy and low carb.

they aren’t going to starve because his parents have seemingly moved into what once was the family room, but I still wonder what’s getting eaten as mom was a good cook and always made sure to have healthy organic meals for the kids. I made an overnight chicken salad with tons of roasted chicken in it and had it there for when they got back home from their trip. Mom showed up the same day and I happen to see them at dinner time and instead of serving my salad with all the roasted chicken, she made spaghetti noodles and a sauce that looked like ketchup. I think it must’ve been canned sauce.

That tamale pie would work. I ate it (as did my dinner guest with her take-homes) the next day and found it to be even better. I just cut a piece and wrapped it in foil. It reheated perfectly in the foil.
