If all else fails, I'll make the caprese skewers, but hoping to find something new.

I'm in charge of the potluck and will have kitchen access. Need something to sit out for about 3 hours and doesn't have to be kept warm/cold.

Kid-friendly, too, as about 30 percent will be children.

I went through the T&T appetizers, but nothing struck me. Oh, and something that won't break the bank smileys/smile.gif

cheezz, how about mini meatballs with a glaze?

Unfortunately, nothing can remain out for three hours without being nonperishable, chilled (including your caprese skewers), or reheated
properly. Your skewers would have to be refrigerated and rotated constantly but you'd have to keep an eye on them.

Most people love hot foods. If you made a huge batch of mini meatballs, you could hold them in aluminum half-pan chafing dishes with sternos and rotate.

A simple recipe is to heat 1/2 cup BBQ sauce and 1/4 cup of grape jelly (glaze) per 35 meatballs and serve with toothpicks. Keep other half trays in fridge.

If you need "holding" instructions, I can post them for you once you decide what to make.

 
How about focaccia?

It's easy and inexpensive. It can be cut into small squares. You could make a couple variations, ie. rosemary and salt, grapes and gorgonzola, potato and sausage, etc. If you like sourdough try the Tartine basic country loaf dough. It makes a good crust and airy crumb. I prefer that style to a softer focaccia although not everyone would agree.

Mushrooms... ugh...one food I can't stand so its not something I would make. Too bad as it seems to be a standard appetizer. Maybe I can pass the recipe on to one of my volunteers!

ANNIE'S FRUIT SALSA AND CINNAMON TORTILLA CHIPS

(One reviewer sprayed and toasted the tortilla chips in the oven first, then threw them into a large ziplock bag with the cinnamon sugar, and shook well until coated.

INGREDIENTS:

2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries, cut up
2 tablespoons white sugar (some reviewers omitted this)
1 tablespoon brown sugar (some reviewers omitted this)
3 tablespoons fruit preserves, any flavor (many reviewers used apricot: one reviewer omitted it altogether)

10 (10 inch) flour tortillas
butter flavored cooking spray (some reviewers used melted butter)
2 cups cinnamon sugar (poster used much less - 1 cup should be enough)

DIRECTIONS:

In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.

Preheat oven to 350 degrees F (175 degrees C).

Coat one side of each flour tortilla with butter flavored cooking spray. (Some reviewers brushed the chips with melted butter). (one reviewer used cinnamon sugar on one side only - first cut tortillas into wedges, then placed on baking sheet, sprayed, and coated with cinnamon sugar). Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.

Bake in the preheated oven 8 to 10 minutes, (or until crispy). Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit and spice mixture.

Serves 10.
