and I always make sure they have fresh milk, bread etc and a meal when they come home.

BUT....This is a new one for me. They are coming in 7:00 in the am...!!! I am planning on making Cathy's Sausage / bacon casserole, and now I am second guessing what to do re: egg dish.... any ideas? I don't think my strata will taste great if they are delayed or needs to be re-heated, etc......

I can't stay / cook.... I just make, drop off, then come home for my kid drop offs, etc... So it will need to be something that could be sturdy.

Appreciate your thoughts!

 
use poached eggs they can be reheated very nicely even from the night before

 
Try your vegetable cups recipe and method at the link, and CathyZ's hot box idea

Chances are, your parents may want a light breakfast then head right for a nap, in case they didn't sleep well on the plane. These would fit the bill, and since they can be reheated in the microwave, by the time all of the luggage and groceries are in, they'll be ready and hot. Or bring them hot in the "hot box."

Or put your strata or fritatta in the hot box.

I don't know the bacon casserole you are talking of making but this type

of sausage and egg casserole is wonderful. It is our Christmas morning casserole--it can be made the night before or even frozen.
It reheats for leftovers so "holds" well also.
If I am reading you correctly, you want to drop it off already cooked? I think these would do well.

Me too, my usual breakfast is a tomato juice concoction, frozen lemon juice cube,

wedge of lime, hot sauce, mix well. Then always fresh, in season fruits, and a little Greek yogurt. My favorite is Greek Goddess with Honey. I usually down a few gulps of Bragg's Apple Cider Vinegar with Ginger Spice. Keeps the acid re-flux in check.

I looked up hot box to remember how to set it up and here was your veggie cup recipe and Cathy's hot box method. Some days you get lucky!
