In Search Of:
Stuffed Apple Dumplings

Stuffed Apple Dumplings
A recipe courtesy of Nathan Scott, CASM, that serves four people.

Filling:
•2 tablespoons dried cranberries
•2 tablespoons all-purpose flour
•2 tablespoons oatmeal
•2 tablespoons finely chopped walnuts
•2 tablespoons light brown sugar
•1 tablespoon unsalted butter
•1/4 teaspoon cinnamon
•1/8 teaspoon nutmeg


Dough:
•2 ¼ cups all-purpose flour
•2 tablespoons granulated sugar
•½ teaspoon salt
•2 sticks unsalted butter, chilled and cut into small pieces


Apples:
•4 apples, (McIntosh are good for this recipe)
•1 large egg yolk
•1 tablespoon heavy cream
•4 whole cloves

Recipe:
Combine the dried cranberries with two tablespoons of warm water and allow to set for 10 minutes.

Combine the remaining filling ingredients with the cranberries. Stir together and set aside.

To make the dough, sift together the flour, sugar, and salt. Cut in the butter until the dough resembles coarse meal. If the dough appears too dry, add four tablespoons of cold water. Then, form the dough into a ball, wrap it in plastic wrap, and refrigerate for one hour.

Peel and core the apples.

Fill the apples with the cranberry filling mixture and set aside.

Roll the dough out to an 1/8 inch thickness; it should measure approximately 16 inches by 16 inches. Cut four eight inch squares from the dough. Wrap one square of dough around one of the apples, leaving the bottom of the apple exposed. Repeat with the remaining apples and dough.

Combine the egg yolk with the heavy cream and brush the mixture on the dumplings.

Place a wire rack on a parchment lined sheet tray. Put the dumplings on the wire rack, spacing them at least one inch apart. Bake the dumplings in a 450 degree oven for 15 minutes.

Lower the oven temperature to 350 degrees and bake an additional 10 -to15 minutes, or until the apples are tender and the crust is golden brown.

Garnish each dumpling by placing a whole clove at the top of the dumpling, so it looks like the stem of the apple. Serve warm with whipped cream or apple syrup.

Apple Syrup:

•¼ cup light brown sugar
•2 cups apple juice
•2 tablespoons of honey
•½ cup water
•¼ cup molasses
•½ teaspoon ground ginger
•2 tablespoons unsalted butter
•2 tablespoons lemon juice


Combine all the ingredients in a saucepot over medium heat. Simmer until reduced by half.

Remove from heat and allow to cool slightly.
