Blue cheese-

Mayo thinned with buttermilk to thickness of your choice with a few teaspoons of red wine vinegar, a dash of worcestershire, a clove of garlic put through a press, pepper & crumbled blue cheese (or feta) to taste.

Honey Raspberry Vinaigrette


Serving Size : 10

1/4 cup raspberry vinegar
2 tablespoons honey
1 teaspoon Dijon mustard
1 small shallot -- finely diced
2/3 cup safflower oil or corn oil
salt and pepper

In a small bowl, whisk together vinegar, honey, and mustard until smooth. Add shallot. Continue to whisk mixture while slowly drizzling in oil. Season with salt and pepper to taste. Chill until serving.

NOTES : Yeilds approximately 1 cup

I love this dressing on Spinach Salad (w/bacon, mushrooms, avocado, hard-boiled eggs, sesame seeds)

Spinach Salad (with bacon, mushrooms, avocado, hard-boiled eggs, sesame seeds)

Dressing, combine in blender:
1 cup canola or vegetable oil
3/4 cup brown sugar
1/4 - 1/3 cup chopped onion (go easy on the onion, start with 1/4 cup, adding more if desired)
1 tbsp Worcestorshire sauce
1/4 cup apple cider vinegar
1/3 cup catsup
dash of salt

Pour over salad layered with:

fresh baby spinach leaves
hard boiled eggs, chopped
fresh mushrooms, sliced
bacon, fried crisp and crumbled (can be omitted for a vegetarian salad)
sesame seeds, lightly toasted
optional but very good: fresh bean sprouts, avocado cubes or slices

 
I am totally addicted to REC: Lemon Tarragon Vinagrette

It's so amazing on cooked vegetables, salad, chicken tossed with roasted corn and artichokes and green beans, the list just goes on and on...

I make it whenever I can find fresh tarragon, which, sadly, does not seem to be a grocery staple any more and I never see it at the farmer's markets.


Lemon Tarragon Vinagrette
from One Upon a Tart

Juice of one lemon
(a little of the zest)
1 Tbl minced fresh tarragon (if you can't find fresh just forget it)
1 Tbl dijon mustard
1/2 c olive oil
pinches of salt and 10 grinds of pepper

pop it all in a jar and shake shake shake!
