VELMA'S 24-HOUR FRUIT SALAD

Recipe By :Velma
Serving Size : 8 Preparation Time :0:00
Categories : Salads

Amount Measure Ingredient -- Preparation Method

2 cups green seedless grapes
2 cups pineapple chunks in juice
2 large navel oranges, peeled and cut in chunks
2 cups large marshmallows -- quartered
1 cup whipping cream
Cooked dressing:
3 egg yolks
2 tablespoons sugar
2 tablespoons cider vinegar
2 tablespoons pineapple juice
1 tablespoon butter

Whisk ingredients for cooked dressing, together and cook over medium heat, stirring constantly until thickened. If the dressing looks slightly curdled after being cooked, beat it with a hand mixer until smooth. Let cool thoroughly--not necessarily in the refrigerator. Whip whipping cream until it holds stiff peaks. Fold cooled salad dressing into it. Carefully fold fruit and marshmallows together, and then fold in salad dressing with whipped cream. Pour into a pretty bowl. Loosely cover with plastic wrap, and refrigerate for 24 hours before serving.

This is delicious, more dessert than salad by today's standards . It wasn't Sunday dinner without

this on the table when I was growing up, at least in the winter time. It's from an old Betty Crocker cookbook and calls for canned white or bing cherries instead of grapes. My mom used white, I think they were Queen Anne or something like that. Everyone loved it.

Yes, but you know how that old joke goes, if one of them were there they would enjoy it but if there

was a group they would avoid it. Remember the one about taking Baptists fishing with a case of beer? If you take two Baptists you can have it all to yourself. If you take one, you have to share it.

Except for the marshmallows this sounds great! (Is marshmallow a breakfast food?) smileys/smile.gif

Heehee...not that we don't drink, but in a group you never know who might be a recovering alcoholic

and we wouldn't do anything to cause another to stumble. Now....if we were Catholic that 2 Tbl wouldn't be enough smileys/smile.gif

Heck, if you're Episcopalian like I am the parish hall fridge is full of beer & wine

Coffee & doughnuts before the service...a drink after.

Ditto the Unitarians here. No drinks after the service that I see but plenty

at Wednesday night dinners and any other gathering.

the marshmallows get all soft and luscious----really nice, and I don't like marshmallows generally

Ambrosia

There are a million different recipes. Easy, serves a lot, and can be made ahead.
