ISO: ISO Spanish or Mexican Rice to serve with the carnitas. A "dry" version, not saucy please.

Dawn, are you looking to substitute the rib part or the beef part?

If you're looking to substitute a different beef product, I would think 1 inch by 3 inch pieces of chuck roast would come very close to matching the short ribs.

If you're looking to substitute the beef, I would try chicken thighs although they won't be quite the same texture and may not need the same amount of cooking time.

I'd say no. This dish is all about herbs and the superb crust that the butter makes. It really

needs fresh.

 
Well, here is what I served for our cinco get together

for appetizers(we were watching the fight)
mariaD's cowboy caviar (in T&T)
guacamole
cajun shrimp (in T&T)
tortilla chips
Corona beer and tropical margaritas and sangria

dinner(still watching the fight(s))
Carnitas with flour tortillas and crispy corn tostadas and lots of toppings
Michael's rice
more cowboy caviar for topping
tossed salad brought by someone else

Dessert tray(still watching fight(s)so thought finger food desserts were the way to go) of nut and lemon tassies(in T&T thanks Sandi)and
fudge topped brownies (in T&T, thanks Cyn)

The carnitas were great! so flavorful and smelled so good too. I didn't have time or room to make the halibut tacos. No one missed them.
Oh, btw, the fight(s) were on TV smileys/smile.gif

 
Oh my gosh Ang, your menu sounds wonderful...

and has me, to coin a phrase that I recently read somewhere, foodsick for San Diego! Yum! You should post your menu in the menu section.
