ISO: ISO T&T recipe for meatloaf.

A friend of mine from Scotland is looking for a good meatloaf recipe. She loves it and says that she always gets it when she comes to the States, but hasn't been able to recreate it. I don't much like meatloaf, so I don't have a recipe...anyone here have a good one? Thanks!

Rice in meatloaf: where did this practice originate, and why? My mom's recipe includes rice, but I've never been (sorry, Mom) particularly fond of it. But I am curious to know if there's some underlying cultural explanation.

I'd guess as an adaptation to meatloaf from former stuffed veggie or meatball recipes

from their home countries. Or just using what you have as filler.

 
This is the meatloaf I always make

This started out years ago as a recipe from Dinah Shore- but I tweaked it so much the original recipe is very different. I don't use breadcrumbs in my meatloaf. I love having the "stuff" in the center- the flavor permeates the entire meatloaf. It is great cold and in sandwiches too. Freezes well.


FABULOUS MEATLOAF (serves 6)

2 lbs lean ground beef
1 medium onion, chopped
3 garlic cloves, chopped
1 egg
2 T soy sauce
1 tsp dried basil
1 tsp dried oregano
1/2 tsp salt
1 tsp pepper
1/2 tsp Cayenne pepper
4 thin slices ham (or pepperoni)
1/2 C chopped walnuts (or pine nuts or pecans)
8 thin slices Jalapeno Jack cheese (or whatever cheese you like-horseradish cheddar is wonderful too)
Catsup to cover top, if desired.

Mix beef, onion, garlic, egg, soy sauce, basil, oregano, salt, pepper and Cayenne.
Put half of mix in loaf pan. Put half the cheese in next, then half of the ham, all the walnuts, the rest of the ham, then the rest of the cheese, and the rest of the meat mix on top. Press down. Cover top with catsup (optional) and bake at 350° for 55 minutes. Drain off juice before slicing and serving.

 
I have never heard of rice in meatloaf but I routinely sub oats for bread crumbs.

I don't think rice sounds like a bad idea though. I use rice in my meat mixture for stuffed cabbage leaves.

 
NOPE. just a little wave action. very little. ps, my boss had an awesome time last week. they

did have to go to higher ground one night.

 
I never heard of rice in meatloaf either. maybe comes from stuffed cabbage or pepper recipes.
