ISO: ISO vegetable dish for Christmas dinner

This sounds so good. Never made a Beef Tenderloin before. Could I make half, with one tenderloin

piece? How many minutes per pound for rare or medium rare? I've never had good luck with meat thermometers to check doneness. Any suggestions?

 
My guy loves anything horseradish. Am I wrong to think this would pare

well with my Honey Baked Ham?

I'm sure you could do a half tenderloin.

I'm not sure about the cooking time, though. My experience has been that it takes a lot longer than the recipe says. I've always gone by the thermometer. Let me get back to you on that.

 
Orchid, I think it would go nicely with your ham

If your boyfriend really likes horseradish, I would up the amount or use really fresh horseradish.
