My Momma's fried corn & corn soup
This is one of "those" kind of recipes, no set amounts.
Momma would put 1 to 1 1/2 sticks of butter (NOT margaarine in her large cast iron skillet over low heat. While it melted, she would cut the kernals off 6-8 ears of fresh corn, scraping the milk from the cob into the skillet as well. She would add a bit of salt and freshly ground pepper, and kept stirring the whole thing until the corn was done. Sometimes she had to add more butter, mainly so the corn mixture wouldn't stick. Serve it hot. It fed the 5 of us well.
For her "soup", she would basically do the same thing, and then pour in a little half-and-half, and whole milk, once the corn was done. Once in a while, she'd add red and green bell peppers, finely chopped and a little onion.
Now I'm hungry for either of these...
And yes, I know that either of these probably clog up more than one artery, but it's only once in a long while that we would get these.
