I tried this recipe a few days ago from a blog that my sister sent me. For copy purposes this recipe is from Living the Gourmet at

Anyway, my sister said that the recipe looked like something our mother made a few times with a few differences. I looked voer the recipe and decided to give it try. Sure enough, the recipe turned out excellent and was exceptionally simple for a recipe of this nature.
Here's from Living the Gourmet,
While all things are meant to be challenged, some things are certainly just meant to be ‘tweaked.’ This is certainly one of those instances.
About 25 pieces of chicken (wings and legs)
2 cups flour
2 ½ cups breadcrumbs (Italian style)
5 eggs
1 oz water
juice of half a lemon
½ cup olive oil
1 tsp oregano (dried)
1 tsp basil (dried)
2 tablespoons of Living the Gourmet Signature Spice Mix
Preheat oven to 375 degrees.
Place flour in bowl, add Signature Spice Mix to flour.
In a separate bowl beat eggs, add water.
Place breadcrumbs in separate bowl.
Coat chicken with flour then dip chicken in egg wash. Then, roll the chicken in breadcrumbs. Place chicken in baking dish.
Combine olive oil, lemon juice, oregano, and basil. Drizzle this over the chicken before baking.
Bake for about 1 hour.
Garnish with lemon and parsley.
The only thing though, I used thighs, legs and wings, rather than just legs and wings. Also, I like to add a little cornmeal or something like that to the flour, but that's just me.
