2 or 3 years ago some kind soul here sent out an SOS that vanilla prices would be escalating so I

promptly ordered half a gallon of Niessen-Massey Madagascar vanilla extract. I figured that amount should last me through a year or 2 or 3 of a bad crop(s).....now I wish I'd purchased a full gallon of the stuff! Pure extract has turned into liquid gold, and the price will probably never go back down. Sigh.

Exactly the point, Maria! All of them, really!

You can taste the difference! In blind testing, the consumer - pastry chef to cookie enthusiast - prefers MORE vanilla flavor. Just use more of the real stuff. Colleen

I kinda dare those Imitation vanilla tester folks to sub that for the paste in this frosting

If I'm looking for vanilla to be the primary flavor I only use vanilla bean paste.

I still use Molina, almost exclusively. I've never been disappointed.
