I'm so glad to hear that, Ang. I would never have thought of roll-ups, OR

of using it as a side for beef, but I it sounds really good.

 
I would not normally serve it with a prime rib dinner, but since it was "pot luck" with the sides,

it sounded somehow right to me. It really was a big hit, and I just have enough for lunch today. to make the roll-up easier, I mixed the spinach/onion with the ricotta and spread it on the noodles, then dabbed some sauce on and some cheese,then rolled them up and sliced the rolls in half, crosswise to make 2 smaller rolls. I have an ancient avocado green electric skillet that has a crockpot insert that was perfect for this as oven space was limited. I made them the night before and chilled them in the crock and then "baked" them in the crock/skillet a few hours before the party. nifty.
