Joy of Low Carb...

I haven't been posting much simply because I'm not cooking "those" kind of recipes. But I thought others might be interested in sharing low carb recipes that actually work AND taste good. I've developed a few that are really wonderful and can share if anyone is interested.

Yes, please!

I miss your posts. And I'm trying to climb back on the low-carb wagon. (The pumpkin pound cake was a statistical fluke.) smileys/wink.gif So please share.

I try not to use excess salt in our food. I grow a small herb garden in an outdoor pot

and use fresh herbs in all our food. Also, fresh lemon and lime juice are big contributors to flavor, as is chicken broth, especially home made.
The herbs I grow all year long are French Thyme, Marjoram, chives, sage, and even basil if you have a nice sunny window. Rosemary grows all year too, and so does savory.

OMG please please please. I am in such a funk with this diabetes diagnosis

I am actually so stressed about trying to follow the dietician's guidelines and then entering things in CalorieKing and looking at the calories because I am trying to keep those around 1200 so i can lose weight, trying to eat a variety of foods, and trying to eat good food - both in flavor and quality as in fresh and local.

I've actually gotten myself pretty depressed not so much over trying to avoid anything but just in trying to plan things out and execute. So now I find myself not eating like I should - not enough mainly and not on any kind of schedule to keep levels even.

By the way, we already have a spot in the forum for Low Carbs under Diet WOES.

Might make it easier to find if they're all in one spot.

Ditto. I use very little salt sometimes none at all, and like Karen

I am quite liberal with the fresh herbs, spices, lemon, orange, and lime zest and juice, garlic, ginger, etc. I cannot even tolerate salt on eggs.

So sorry to hear that MCM...

I hope you can learn to manage things effectively with your diet. I've been low-carbing since June with two big breaks (4 weeks in the fall for vacation and then another 4 weeks for the holidays).

I have lost 50 lbs. doing low carbs and I am eating what I consider a very healthy diet that is filled with really good and nutritious food. During this time, my Dr. has had to halve my prescription for hypertension medication (I was being over-medicated with the weight loss) and we're hoping when I get another 25-30 off that we can just stop it all together.
