Joy of Low Carb...

Yes, me too. In case anyone is interested, I have a Yahoo group that

is low-carb, started it about 4 years ago. It's called GRS_Low_Carb (as in Gail's Recipe Swap) - way back when we were there. I think a couple of you joined, but did not get a large response. As more here are doing it for health reasons, maybe those of you who are trying to control carbs can take a look. Some good recipes there, although most of them are not my original ones.

I'd love to hear some of yours, Richard, and will take a look at the WOE section.

Even mundane recipes, or lists of food options, would be great. Especially for dinner options. Your outline/suggestions were GREAT, especially the breakfast section. I haven't done Low-Carb in years, but it's time to start again.

Giving up the breads and pasta (the go-to meals at the end of late night days during 80 hour weeks) wasn't nearly as difficult as giving up corn (my fave) and cooked carrots (which took me probably my whole life to learn to cook/tolerate). When I slowly migrated back to non Low Carb I was STUNNED the first time I had corn again - it was like eating raw sugar. I was so looking forward to the corn, and it was SO disappointing as I have almost no sweet tooth. (Yes, I know, friends who all wear the tin-foil hat!)

This is a great thread all. Please let's keep it going.

PS. Richard . . . Someday we'll have to do a Skyline dinner in Cincy together!!

You'll be pleased to know that I still include skyline on my low carb diet. When you subtract the pasta and the bun, what you have left are the real tastes of Cincinnati Chili without the carbs.

It's also possible to do the "Skyline Dip" (layers of cream cheese, chili, onions, cheese, bake) and eat it with a spoon or scoop it with my flax seed crackers or pile it on cucumber slices for conveyance to the mouth. Totally low carb.

And yes, we'll do that trip to Skyline some day!

I know what you mean about going off the low carb wagon. Over christmas I had stockpiled all the usual: homemade cookies, candy, breads, crackers, popcorn, etc. I didn't make a dent in it because 1: suddenly it didn't taste as good as I remembered. 2: wasn't satisfying. and 3: I just couldn't eat it like I used to. I ended up tossing a lot of it afterwards. A great lesson to learn!
