Son is getting married in the late afternoon in hot October. Dinner will start with a nacho bar, then serving salmon and beef, with grilled veggies, gnocci, and mashed potatoes. The rehearsal dinner the night before will probably be Mexican food.

---I'm to bring something for the wedding party to eat for a light lunch while getting dressed and prettied up. What do you think of setting it up like a tea party with small sandwiches and some chicken salad?

Very nice idea, Anna. Speaking of nachos, we had PioneerWoman's Cowboy Nachos last night. Tasty!

I have no clue how to do brisket, but I had chunks of cooked pot roast in the freezer, so I shredded that on Santilla corn tortilla chips, topped that with drained canned organic pinto beans, topped bottom layer with shredded colby/jack cheese and topped the top layer with shredded quesadilla cheese. Broiled until brown and crispy, then topped the whole kit and kaboodle with salty/limey pico de gallo.

Follow her pictures...the way she stacks them you get a taste of everything in every bite, rather than mounding all the beans in the middle, etc.

Me too! We did a taco/nacho bar for Easter and everyone loved it.

I think little sandwiches sound like a great idea. Easy to pick up and hard for the girls to spill on their dresses.

PB = peanut butter dip? That's sounds interesting and healthy, to boot.
I did a little searching around for tea parties -- you are the QUEEN and I bow before you. How did you get into doing these so often? People must demand to come to your parties. You treat them so well, with beautiful table decorations, too.
I just ordered some of Cactus Sue's oreo molds with wedding bells on them. That will make a cute dessert to have with the other foods.

 
Love the sandwiches idea. Cucumber and butter would be refreshing.

Someone needs to make sure the bride eats. I didn't get lunch before my 4pm wedding, and it was a BIG mistake.

Our local Hawaiian resto makes Kahlua Pork Nachos with mango salsa - pure heaven!
