Christmas Dinner. My step-daughter and hubby bought house, she can't cook, but likes to learn. She told me she wanted to cook Christmas Dinner for her family, and I said I'd come on the 22nd and cook. Called her this week for how many, she invited EVERYONE, and EVERYONE wants to come because I'm cooking. We're thinking 2 briskets and a turkey. However, I bought all these pecans, any favorite recipes out there?

Cocktail Orange Pecans - From my to-try list - they sound great.

COCKTAIL ORANGE PECANS

* 1/2 lb butter
* 3 tablespoons orange liqueur (Cointreau or Grand Marnier)
* 1 tablespoon finely grated orange rind
* 1 1/2 lbs pecan halves
* 1 tablespoon salt

1. Preheat oven to 300°.
2. In a large saucepan, melt the butter over medium heat; add in liqueur and orange zest; stir until blended.
3. Remove the pan from heat, add in the pecans, and toss to coat well.
4. Spread the nuts evenly on a large baking sheet and toast in the oven, uncovered, until golden brown, about 30 minutes, tossing the nuts from time to time.
5. Drain on paper towels, sprinkle salt on top; let cool completely, and serve in crystal bowls with cocktails.

Pecan Cranberry Spread - another from my to-try list

PECAN CRANBERRY SPREAD

1 (8 ounce) package cream cheese
1/4 cup orange juice
1/2 cup craisins or dried cranberries
1/2 cup pecans, chopped

1. In a small bowl, beat cream cheese and orange juice until smooth.
2. Fold in craisins and pecans.
3. Cover and refrigerate for at least 1 hour.
4. This is wonderful served with Wheat Thins crackers.

REC Tike Treat (T&T ) - This is delicious - great for both kids and adults

TIKE TREAT

INGREDIENTS:

1/2 cup chopped pecans (I used toasted pecans)
1/4 cup coconut
4 bananas
1 cup orange juice or lemon juice (I used fresh orange juice)

DIRECTIONS:

1. Place pecans and coconut in a small paper bag.
2. Peel bananas and cut each one into 5 slices.
3. Roll banana slices in the juice.
4. Put banana slices in the bag and shake.
5. Put banana slices on a tray.
6. Refrigerate for 1 hour and serve.

REC: Caramel-Coconut-Pecan Brownies - these sound fantastic.

CARAMEL-COCONUT-PECAN BROWNIES

To easily remove and cut brownies, line the pan with greased and floured heavy-duty aluminum foil, allowing several inches to extend over sides. After baking and cooling, lift the block of brownies from the pan using the foil. Press the foil sides down, and cut.

Ingredients

* 4 (1-ounce) unsweetened chocolate baking squares
* 1 cup butter, softened
* 2 cups sugar
* 4 large eggs
* 1 cup all-purpose flour
* 1 teaspoon vanilla extract
* 1 cup semisweet chocolate morsels
* 2 cups sweetened flaked coconut
* 1 (12-ounce) package semisweet chocolate morsels
* 1 1/2 cups chopped pecans
* 1 (14-ounce) can sweetened condensed milk

Preparation

Microwave chocolate squares in a microwave-safe bowl at MEDIUM (50% power) 1 1/2 minutes, stirring at 30-second intervals until melted. Stir until smooth.

Beat butter and sugar at medium speed with an electric mixer until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition. Add melted chocolate, beating just until blended.

Add flour, beating at low speed just until blended. Stir in vanilla and chocolate morsels. Spread batter into a greased and floured 13- x 9-inch pan. Sprinkle batter evenly with coconut, 1 (12-ounce) package semisweet chocolate morsels, and chopped pecans. Drizzle evenly with sweetened condensed milk.

Bake at 350° for 50 to 55 minutes or until golden brown and center is set. Cool completely on wire rack. Cut into squares.

Makes 32 brownies

Small Batches
Shelling a small batch makes cleaning the meats from the shell much easier. First the pecans shells are cracked by the pecan cracker, and then the batch is processed with the pecan sheller. This sheller rolls the pecan meats from the shell while leaving the pecan halves mostly intact. After this process, about 70% of the loose shell is blown off of the pecan meats with our aspirator. The finished product is about half of the original weight from the loss of shell, and can be cleaned easily by the customer on a table top.

Pecan Pie, I would love to convert these 2 recipes into 1

Cream Cheese Honey Pecan Pie Crunch.


Cream Cheese Honey Pie

1 tsp. butter,
8 oz cream cheese
2 Tbsp butter,
3 Tbsp honey, warmed,
2 eggs, lightly beaten,
1 tsp ground cinnamon,
1 8 inch pie shell,

Set the oven at 375. Beat softened cream cheese, sugar, and honey together. Add the eggsone at a time, beating well after each addition. Pour mixture into pie shell, and bake for 30-35 minutes, or until lightly browned. Sprinkle cinnamon over the top, and let cool before serving.


Karla, honey and cream cheese work well together......when you bake it,
check it about 10 minutes before the stated baking time is up......if it is set on
the edges, and just a bit soft in the center, turn the oven off, but leave the door
closed for 5 minutes, then open the door so it's ajar, and allow the pie to cool
in the oven until the oven is down to room temperature. Then take the pie out
and let it finish cooling on the counter. Then wrap and chill it.

The 1st recipe had to come from Epi Chat, because they called me Karla, I wish I had saved who gave it to me. I just found the second recipe.

Honey Crunch Pecan Pie Ingredients
CRISCO CRUST

1 1/3 c All-purpose flour

1/2 ts Salt

1/2 c Butter flavor Crisco shorten

4 tb Cold water



PECAN FILLING

4 Eggs,slightly beaten

1/4 c Brown sugar,packed

1/4 c Granulated sugar

1/2 ts Salt

1 ts Vanilla extract

1 tb Bourbon

2 tb Butter,melted

1 c Chopped pecan nuts


Crunch Topping
1/3 C Brown Sugar
3 T Butter
3 T Honey
1 ½ C Pecan Halves







Instructions for Honey Crunch Pecan Pie
Preheat oven to 350 degrees.
For crust:
Combine flour and salt in mixing bowl. Cut in shortening with pastry blender or 2 knives until mixture is uniform. Sprinkle in water,1 tbsp. at a time, until dough forms a ball. On lightly floured surface,roll crust into circle 1/8" thick and about 1 1/2" larger than inverted 9" pie plate. Gently,ease dough into pie plate,being careful not to stretch the dough. Fold pastry edge under to make double thickness around rim. Flute as desired.
For Filling:
Combine all ingredients except pecans.Mix well.
Fold in chopped pecans;spoon filling into unbaked pastry shell.Bake @ 350 degrees 50 to 55 minutes.
During last 30 minutes of baking,cover edge of pastry shell with aluminum foil to prevent over browning.
For Topping:
Combine sugar,butter and honey in medium saucepan. Cook over medium heat until sugar dissolves,about 2 to 3 minutes. Stir constantly. Add pecan halves. Stir until pecans are well coated. During last 10 minutes of baking,remove pie from oven;spread crunch topping evenly over top. Return pie to oven;bake remaining 10 to 12 minutes or until topping is bubbly and golden brown.

Here is what I came up with, but the baking time remains to be seen, I will let you know later today. So for now, the baking time and temp seems reasonable.

 
And now the recipe...DUH! plus I welcome suggestions

I love layered flavors, if anyone can think of anything besides or plus cinnamon to sprinkle under crunch topping let me know.

Pie

3 eggs slightly beaten
1/4 C honey warmed
1/4 C brown sugar packed
8 oz cream cheese
1t vanilla
1 T whiskey
1/2 t salt
1 t ground cinnamon


Crunch Topping

1/3 C Brown Sugar
3 T Butter
3 T Honey
1 ½ C Pecan Halves

Pie

Beat softened cream cheese, sugar, and honey together.
Add eggs 1 at a time, beating well after each addition.
Add salt, vanilla, and whiskey.
Pour mixture into unbaked pie shell.

Sprinkle cinnamon over top of pie.
Bake @ 350 Degrees, test at 45 minutes if top is set see how much is left to go
in middle with toothpick, if you discern 10-12 minutes, add pecan topping.
Crunch Topping

Combine sugar, butter, and honey in medium sauce pan until sugar dissolves,
stir constantly for about 2 or 3 minutes. Add pecan halves, and stir until well
coated. Return pie to oven during last 10 minutes of baking,
