I can tell you from experience that fruit cakes, if kept well doused in air-tight containers, will keep for LONG periods of time. I personally have eaten cakes that were well over 5 years old, but the story I really wanted to share will blow your mind. My in-laws had a fruit cake for their wedding cake. They were married in 1934. I was present for their 35th anniversary when they ate the last 2 small slices of that cake. My MIL had kept the top layer, carefully wrapped in cheesecloth, and well doused with sherry, in a metal tin. They had a few bites of cake at each anniversary, until it was finished at the 35th. That was in 1969. They celebrated their 50th in '84. (no ill-effects from consuming 35 year old cake)
