What is the best (I.e. most flavorable) cut of beef to make hamburger out of?

I know some of you make sausage but I've never been a fan. For those of you who use a grinder...what else can I do besides hamburger?

A few ideas

Ground turkey.

Melissa Dallas posted a recipe ages back for a pimento cheese that is AWESOME. I've made it several times to great compliments.

Also, since you control the fat and flavor you might like a sausage you make. I am not a fan of store bought sausage as it usually has tons of fat and fennel and has a processed texture. When we grind our own I don't add extra fat, but do add tons of flavors we like. The last big batch we did we made Irish Bangers, an Italian Sausage and a Mexican Sausage. And you control the texture with your choice of grind. You can flavor ground beef and turkey "sausage" the same way.

oh, I love pimento cheese!! Hadn't thought of that. I might try beef sausage

Youre right, it just seems so fatty to me (the ones you buy) and have weird flavors. I'd like to make one flavored like the Jimmy Dean hot sausage smileys/smile.gif

I'm thinking you may have hit on a new weight loss plan without realizing it.

"The South Hamilton-Beach Meat Grinder Diet".

Just pull the drapes closed, (or in your case, Steve, THROW the darn things WIDE OPEN), drop your puffy shirt and pantaloons and start makin' sausage! Anything that happens to get caught danglin' too close... POOF! There goes another 3 pounds!

Might just catch on.

Chuck. Full-flavored, and more fatty. However... here are some more ideas if you're a fan

of British pastys, etc. and want to utilize your meat grinder.

I finally investigated this wonderful Brit shop today at lunch and found all of these great staples. These delicasies combined with good pastry skills, make for very delicious treats! Or, just make Brit-type sausage.

You just have to google for recipes.

I am chomping-at-the-bit for the Lamb Bombay Jumbo Sausage Roll and their Steak, Kidney, & Mushroom Pasty!! One day this week for lunch!!

I don't own a grinder. Don't forget that you can make chicken sausages that I've

been eating for many years. A lot less fat and you can buy good quality chicken to make same with your own concoctions of spices and herbs.

Sandy, do they have priest or vicar or beadle pies? One can never tell if a pie of poet is dead.

I agree that chuck makes the best tasting burgers. I've used other cuts...

...and love to make burgers from whatever shows up in the "quick sale" bin at my local market.

Be careful to trim the gristle well. I didn't pay as close attention to it as I usually do and the last batch of burgers had "toenails", to quote Roseanne Roseannadanna.

I grind the meat in my food processor, as I said earlier.
