Just got my brand new Waring meat grinder! Now....questions!

The couple of times I tried using my Cuisinart to grind it got too warm

Seemed like it partially cooked the meat and lost a lot on the texture.

 
I don't think anyone else mentioned this, so I will: Grind meat when it is partially frozen . . .

I read this somewhere, and have noticed that my local market does this. Keeps the meat from over heating and makes sure that the meat comes out discretely chopped versus all toghther mushed.

 
Tri tip is TOO lean? I have to trim fat off the trimmed ones even and there looks like

A lot of marbeling. Does it make for a drier burger?

 
That's my guess, but I haven't tried it. You could give it a try since it's not an expensive cut.

I don't know if how you grind it makes a difference, but I use CI's technique...

...of cutting the meat into 1 inch chuncks and pulsing it in the processor in batches.

They recommend 15 one-second pulses. I sometimes go past the 15 pulses, but maybe the on/off cadence might not heat things up as much?

Just a thought.
